Does it matter which sensor I put on the hot or cold line?

It does not matter which sensor is installed on the hot or cold line. They are interchangeable.

Be sure that when you unthread your hot and cold water hoses you replace the correct hose back to the correct angle stop. If not, your hot water will come out cold and vice versa.
